I do love always changing and coming up with recipes, but this is one of my steadfast favorites. It is easy and full of healthy ingredients! I usually make a batch a week; they are always a handy snack and make for a fun topping on just about anything. I have been inspired by tons of recipes to come up with this so I definitely cannot take full credit, but they are certainly delicious.
In a small bowl combine:
2 tbsp coconut flour
3-4 tbsp oat fiber (can substitute oat flour)
4 tbsp cocoa powder (I use Hershey’s Special Dark)
4 packets stevia, or sweetener of choice
1/2 tsp baking powder
1/2 tsp baking soda
Then add:
3/4c egg whites
2 tbsp water
dash of vinegar
dash of vanilla extract
Mix dry then add wet ingredients, and bake at 350 in a 8×8 pan for about 10-15 minutes or until the top is firm to the touch. If you like a more dense, moist brownie add 2-3 tablespoons of pumpkin or applesauce.
Smother it in (@hankspb ) peanut butter, make a parfait, or just enjoy plain!

I don’t calculate macros, but it should be pretty easy to do on an online calculator! These are definitely a healthy treat though 🙂
